1chop all veggies. slice the mushrooms
2Saute mushrooms in coconut oil for 7 minutes
3Add the rest of the veggies to the pan with the mushrooms Saute for about 4 minutes or to the texture you desire.
4Break the eggs into a bowl and beat the eggs with a whisk
5Pour the eggs over the sauteed veggies. Constantly stirring until the eggs are the consistency that you like.
6Tip: You can add a little Bragg''s Liquid Aminos for a little saltiness. It looks like soy sauce but has much lower sodium grams.Available at Whole Foods Market and online
