Preheat oven to 400 degrees F.

Put chicken in a small skillet and sprinkle with cumin and garlic. Add water and simmer until chicken is tender and falls apart easily, about 1 hour.

Shred or chop chicken finely and add cheese and spinach. Toss to combine.

Add chicken and cheese to the center of each tortilla and roll up. Place, seam side down, on a baking sheet and spray lightly with cooking oil or Pam.

Bake for 15 minutes or until lightly browned.
