1Quarter washed leeks lengthwise and then cut into 1/2" pieces, leaving about 1" of the bulb.
2Chop 1/2 of a medium yellow onion roughly.
3Melt butter into a medium or large soup pot.
4Add leeks and onion to pot with melted butter. Cook with the lid on until soft, stirring occasionally.
5Peel then chop potatoes into 1 inch cubes.
6Add potato chunks to pot and cook about 2 minutes, stirring.
7Add vegetable broth and salt to pot.
8Let simmer covered for approximately 40 minutes.
9Remove from heat and mash with a potato masher, or puree in parts in a blender.
10Add half and half and pepper and serve.
