Steps
Sequence Step
1Brine chicken breasts (2TBL salt to 1 Cup water) in quart ziplok bag for at least half-an-hour. Overnight is better.
2Drain breasts and divide into 4oz portions
3pound chicken breasts to uniform thickness
4Mix Parmesan cheese, paprika, Italian Seasoning, and Parsley together and pour onto shallow dish or plate.
5Dredge chicken through cheese/herb mix, patting it on well.
6Bake in 400F oven until chicken is cooked through (Approx 25 minutes or -)
7While chicken is baking, shred zucchini into long strings with a mandolin or spiral veggie spaghetti slicer
8Blanch zucchini strings in boiling water for about 30 seconds. Literally, pour in the water, garb the colander, strain it out. It cooks that fast.
9Make nice mounds of "spaghetti" on 4 oven-safe plates
10Top with cooked chicken breast
12top with shredded mozzarella
13Pop under the broiler until cheese is melted. Serve hot
