Brine chicken breasts (2TBL salt to 1 Cup water) in quart ziplok bag for at least half-an-hour. Overnight is better.

Drain breasts and divide into 4oz portions

pound chicken breasts to uniform thickness

Mix Parmesan cheese, paprika, Italian Seasoning, and Parsley together and pour onto shallow dish or plate.

Dredge chicken through cheese/herb mix, patting it on well.

Bake in 400F oven until chicken is cooked through (Approx 25 minutes or -)

While chicken is baking, shred zucchini into long strings with a mandolin or spiral veggie spaghetti slicer

Blanch zucchini strings in boiling water for about 30 seconds. Literally, pour in the water, garb the colander, strain it out. It cooks that fast.

Make nice mounds of "spaghetti" on 4 oven-safe plates

Top with cooked chicken breast
