Preheat to 400°F. Coat a nonstick muffin tin generously with coconut oil/line with baking cups.

Add oil to the pan. Add onion and cook until soft. About 1-2 minutes.

Add veggies and cook, stirring often, until golden brown, 5 to 7 minutes. Transfer to a bowl. Let cool for 5 minutes.

Whisk eggs in a medium bowl. Divide the egg mixture evenly among the prepared muffin cups. Sprinkle a heaping tablespoon of the mixture into each cup.

Bake until the tops are just beginning to brown, 20 minutes or until egg is completely cooked through. Let cool on a wire rack for 5 minutes. To remove quiches, slide spoon along entire circular muffin cup edge and lift out. You can also line muffin tins with paper cups for portability.
