| 1 | preheat oven to 375. Place zucchini in 9 x 13 casserole dish and bake for 20 min. | 2 | Break up and brown turkey sausage in skillet. Add onion and some of scooped zucchini. Saute until sausage is no longer pink and onion softened. | 3 | Add tomatoes. Bring to a boil. Add brown rice and stir. Cover and turn off heat. Let sit for 5 min. Stir in 1/4 c. Parmesan cheese. | 4 | Stuff zucchini with sausage mixture. Add remainder of mixture to pan and sprinkle with remaining cheese. Bake in oven for another 20 min. Serve |
