Homemade Organic Protein Bars- Kid Approved
Ingredients -
1 Organic Banana, mashed
1/4 cup Organic Coconut Oil
1/4 cup Raw Organic Peanut Butter (Any nut butter will work)
2-4 scoops of your favorite protein powder
1/4 cup Organic Shredded Coconut
1/4 cup Organic Raisins/ cranberries , or any dried fruit you desire
1/4 cup water (depending on how much protein powder you use, you may need to add a little more water, but not much. 1/4 more at most, as the batter should be thick, and chunky.)
1/4 cup Organic Unsalted Sunflower Seeds
1 1/2 cups Organic Natural Rolled Oats
1/2 cup Organic Carob** or Chocolate Chips
Method -
- In a medium bowl mash the banana.
- Add coconut oil and peanut butter and stir with a fork until well combined.
- Add coconut, oats, protein powder, sunflower seeds and water, stir until well combined.

Method -

- Add coconut oil and peanut butter and stir with a fork until well combined.
- Add coconut, oats, protein powder, sunflower seeds and water, stir until well combined.
- Finally add your raisins and stir to combine.
- Line a loaf pan with baking paper and spoon “batter” in, press down to smooth evenly over the dish, and make sure it reaches the edges.
- Place in the freezer until firm (at least 2 hours usually)
Once set - OPTIONAL
- Melt chocolate then remove the protein bars from loaf pan and cut into whatever size bars/ squares/ miniature bites you like.
- Dip one side of each protein bar into the melted chocolate then set onto parchment paper to set (it should only take a few seconds as the bars as super cold from the freezer)
- Drizzle the tops with remaining melted chocolate (if there is any)
- Once the chocolate has set, wrap in cling film and store in the freeze until ready to eat.
**Carob is a legume that comes from a tree and is often used as a substitute for chocolate or cocoa. It is sweeter than chocolate and healthier; it contains vitamins and minerals such as vitamin B1, vitamin A, niacin, potassium, calcium and other valuable nutrients. It is lower in fat and calories than chocolate. Many people have found melting carob chips to be difficult and resulting in a paste. Melt carob chips by mixing the carob with milk (I used almond milk), oil or Paramount Crystals.
