1Preheat oven to 450 F. Split and seed squash. Brush each half with olive oil and sprinkle with 3/4 tsp salt and pepper. Place cut sides down and roast about 25 minutes, until pierces easily. While roasting. Heat olive oil in pan. Add onions and garlic until translucent. Add mushrooms, sage and pepper flakes. Saute until mushrooms soften. About 5 minutes. Fill roasted squash halves with mushroom filling. Additionally you may top with shredded smoked gouda. Bake again for 10 minutes.
