Slice zucchini and set aside. Steam cauliflower and set aside. Slice half a small tomato into thin slices and set aside. Saute ground turkey with chopped onions in a pan coated with cooking spray over medium heat until the meat is cooked and the onion is tender. Then stir meat, onions, cauliflower, and most of the cheese into a bowl.
Now start layering: zucchini, tomato, meat/onion/cauliflower/cheese mixture and repeat until everything is gone. Then sprinkle the remaining cheese over top.
Bake at 350 for 10 minutes. Check frequently. Once cheese melts it is done. Let cool, then eat and enjoy your healthy lasagna.
