Combine the egg, cayenne, mustard, salt, lemon juice, vinegar and 1/4 c. oil in the container of a blender or food processor.

Wash and hull fresh strawberries

In large stainless steel pan, add strawberry puree, remaining apple cider vinegar, lemon juice to sugar.

Stir thoroughly and bring to full boil. Boil until you can no longer keep the boil from coming up by stirring.

Turn off heat and skim foam off with large stainless steel spoon.

Ladel jam into jars leaving 1/4" headspace.

Clean threads and tops of jars and add lids and collars. Only hand tighen and process in water bath for 10 minutes.

Allow to cool on rack. Be sure that lids have sealed. Store in cool place and refrigerate after opening.
