Preheat oven to 400 degrees. Season fish with salt and pepper. Arrange the fillets in a single layer in an ovenproof baking dish. Top with lemon slices and thyme sprigs. Drizzle with olive oil and wine. Sprinkle with butter cubes.

Cover baking dish with aluminum foil; roast covered for 15 minutes. Remove foil and continue to roast uncovered for another 5 to 10 minutes, until fish is cooked through and flakes easily. Remove thyme sprigs. Serve fish drizzled with pan juices.
