1Preheat oven to 375 degrees. Sift flour and baking soda together, set aside. Cream shortening and Splenda with electric mixer. Blend in salt, spices, and egg. Add half the flour mixture and blend well. Blend in half the applejuice. Add the finely chopped apples, nuts and raisins to the remaining flour mixture and stir to coat. Add this and the remaining applejuice to the creamed mixture and stir by hand. Spread in a 9X13 pan that has been sprayed with cooking spray. Bake 20-25 minutes or until they test done with toothpick. Cut while barely warm.
2These can also be made as cookies. Mix well and drop by rounded teaspoons on a lightly greased cookie sheet. Bake at 375 degrees for about 10 minutes or till lightly browned. Note* 1/2 cup applesauce can be substituted for applejuice.
