tortillas (approx 7-8" dia)tortilla, whole wheat

Steps
Sequence Step
1Saute onion and pepper.
2Add tomato, 3/4 c salsa, corn and pepper.
3Place beans, taco seasoning and rest of salsa in blender or food processor and blend until smooth.
4Spred 2 T of bean mixture on each tortillas.
5Sprinkle tortillas evenly with cheese.
6Combine eggs, beat well
7Heat pan.
8Add egg mixture and cook until mixture is firm but moist.
9Spoon egg mixture evenly over tortillas and then spoon veggie mixture evenly over eggs.
10Roll up tortillas and secure with plastic wrap.
11Garnish with more salsa.
