Mash bananas. Add honey and vanilla, mix well.

Add eggs and coconut oil. Stir well.

Mix dry ingredients and 1 teaspoon salt together. Stir in chocolate chips.

Add banana mixture to dry ingredients and mix well.

Pour into paper lined muffin tin to approximately 3/4 full.

Place tin into a preheated 350 degree oven and bake 18 to 20 minutes or a toothpick inserted comes out clean.

Remove from oven and cool 5 minutes. Remove muffins from pan to cooling rack and cool completely.

Store in an airtight container up to five days in refrigerator or freeze.
