1Whisk vinegar, garlic, and mustard together in a small bowl.
2Whisk, and while whisking, slowly add olive oil.
3Add salt, pepper, and herbs.
4Taste dressing with ingredient that it will be used on (a piece of lettuce, for example).
5Adjust dressing to taste, adding sugar if too tart and more vinegar if too oily.
6Toss HALF of dressing with salad ingredients. Place the other half in a container with a lid for later use. Dressing can be kept for up to one month in the refrigerator.
