Preheat to 375°F
Ground up 2 cups
rolled oats into oat flour
In a smaller bowl mix together the oat flour baking powder, baking soda, and salt
In a large bowl beat the egg until frothy
Mix in maple syrup, sour cream, vanilla extract
Mix the dry ingredients into wet and stir until mixed
Stir in the extra cup of rolled oats
Fold in the berries
Pour into baking pan
Bake for 40 minutes or until fork comes out clean, rotating once halfway through
