Saute veggies (except spinach) on medium high heat until onions are light brown. Spoon veg mixture into lightly oiled muffin tins. Top mix with evenly divided spinach, feta cheese, and flaxseed. Then beat the eggs lightly with salt, cayenne and oregano. Pour the eggs into each muffin tin until about 1/4 inch from top. Bake at 375 for 16-18 min.
