Heat the oil in a skillet or dutch oven. Sautee the minced onion over medium heat.

When onions are soft, add diced tomatoes.

When tomatoes are soft, add ginger and garlic.

Immediately add the ground beef, followed by the spices. Cook until beef is done.

Stir the beef to cook it evenly and break it up into small pieces. In the meantime, boil the cut potatoes until a fork will just go into them. Add the frozen beans (or you can substitute peas) to just thaw them. Drain potatoes and beans and add to the pan once the beef is cooked.

Cook until potatoes and beans are heated through.

Serve with Dahl, rice (white or brown), and low-fat or non-fat yogurt.
