Heat the oil and sautee the minced onion in the oil until soft.

Add the tomatoes and continue cooking until they are soft.

Add the garlic and ginger.

Rinse the lentils and remove any rocks or hulls. Drain and add to the sauteed mixture.

Add 2 cups water. Add spices. Raise heat just to boiling and lower to a simmer for 12-15 minutes until soft and the lentils are indistinguishable.

In the meantime, sautee the thinly sliced onions in the butter. Drain/remove from the butter when they are crispy and brown, but not burned.

Serve with white or brown rice, and low-fat or non-fat yogurt. Garnish with crispy onions (bungar).
