1 | dice bacon and cook in large pot over medium heat until crispy (about 6-8 minutes). set bacon aside in a bowl. |
2 | melt butter in same large pot. add chopped carrots and celery. cook 3 minutes. |
3 | add roughly chopped cauliflower and basil. cook 3 minutes. |
4 | add corn starch. cook 1 minute stirring constantly. |
5 | slowly whisk chicken broth and milk. continue to whisk for 3 minutes. |
6 | increase heat to bring to a boil. reduce heat and simmer uncovered 13 minutes, stirring occasionally. |
7 | add in 1 cup of shredded cheddar and whisk to mix. continue to simmer an additional 2 minutes. |
8 | serve immediately. top with additional cheddar and bacon pieces. |
