Dice chicken. Heat a heave pan over medium high heat. Add chicken and 2 t. lemon juice to pan and cook 10-15 minutes, until chicken is cooked through. Cool chicken for 10 minutes. Add chicken, remaining lemon juice, and next 5 indregients to a bowl and mix. Spread 1/2 C. chicken mixture over 2 slices of bread and top with 2 lettuce leaves and 2 tomatoe slices. Serve.
