| 1 | Preheat Oven to 400 Degrees | 2 | Place walnuts in a food processor to chop/grind | 3 | Combine oatmeal flour, flax seed, baking powder, baking soda, and sea salt in a medium bowl; stir well with a whisk. Stir in walnuts. Make a well in the center of mixture. | 4 | Combine honey, coconut oil, vanilla, yogurt and egg in a small bowl; add to the flour mixture stirring just until moist. Fold in diced pears. | 5 | Spoon batter into 15 muffin cups coated with cooking spray; bake at 400 degrees for 18-20 minutes or until muffins spring back when touched lightly in the center. Remove from pans immediately and place on wire rack. Serve either warm or at room temperature. |
