Place cashews and shredded coconut and salt in food processor. Blend until cashews and coconut are finely ground.

Add the remaining ingredients (except for 3/4 cup shredded coconut for rolling) into the processor and blend until smooth.

Remove from blender. Roll into small balls, then dip in in shredded coconut. Place the rounds on a plate and refrigerate for 10-20 minutes. Save in refrigerator.
