Wrap halved pita bread in aluminum foil and place in the oven to warm

In a medium bowl, whisk together the eggs and egg whites until well combined. Add almond milk, tomatoes, salt and pepper until combined.

In a large skillet heat the olive oil over medium high heat. Reduce the heat to medium, add egg mixture and cook, stirring frequently, until eggs are set. Add the goat cheese and cook, stirring until cheese is melted about 1 minute.

Stuff one fourth of the mixture in each pita bread 1/2 and serve immediately.
