Peel and cut potatoes into thin fries, fry them up in the deep fryer or shallow pan. Take out when golden brown and crispy onto a paper towel lined plate. Grate the mozzarella and prepare the sauce of your choosing (I like poutine sauce, hot chicken sauce or plain old brown gravy) according to the package instructions. Seperate the fries into 4 plates equally, top with equal amounts of shredded cheese and then sauce and serve!
