Combine peanut butter, vanilla, honey, powdered sugar, hemp seed, flax seed, and chia seed in a medium- sized bowl. Using first a spoon and then your hand, mix until the texture is like cookie dough.
2
Next, line a baking sheet with parchment paper. Scoop about 1 tbsp of mixture and roll each into a ball shape. Place on paper.
3
Place baking sheet into freezer for about 30 minutes, or long enough for the balls to firm up a bit.
4
Place chocolate chips in a bowl. Heat for 45 seconds, stir, then heat again for 15 second intervals until melted
5
Once the balls are firm, use a toothpick to dip into the melted chocolate. Let any excess chocolate drop off before placing back on the baking sheet.
6
Place baking sheet back into fridge to speed up the drying process.
