Steps
Sequence Step
1Heat oil over low heat. Add carrot, onion, red pepper and potato. Cook until onion is translucent - about 10 minutes.
2Add curry paste - stirring constantly until fragrant - about 2 minutes.
3Add water and coconut milk and bring to light boil. Cook until potatoes and carrots are tender. About 15-20 minutes.
4Add chick*n and brown sugar and cook until chick*n is heated through - about 10 minutes.
5Prepare 1 Tbsp cornstarch
