Steps
Sequence Step
1Cook carrots, celery and onions in a pot with oil and cayenne pepper until slightly soft (approx. 4 mins)
2Mix in quinoa,chicken broth and water; bring to a boil
3Reduce heat and simmer for approx. 12 mins (until quinoa softens)
4While soup base simmers sauté chicken until cooked through
5Shred or cut chicken into bite sized pieces; add to soup base
6Simmer until hot throughout (approx. 5 mins)
7Season to taste (salt, pepper, your choice of other spices)
8Optional: Garnish with slice of lemon and parsley
