Cook carrots, celery and onions in a pot with oil and cayenne pepper until slightly soft (approx. 4 mins)

Mix in quinoa,chicken broth and water; bring to a boil

Reduce heat and simmer for approx. 12 mins (until quinoa softens)

While soup base simmers sauté chicken until cooked through

Shred or cut chicken into bite sized pieces; add to soup base

Simmer until hot throughout (approx. 5 mins)

Season to taste (salt, pepper, your choice of other spices)

Optional: Garnish with slice of lemon and parsley
