MASHED POTATOES----Peel and cut potatoes. Boil until soft. Drain. Add 1 stick butter. Add milk. Using electric mixer, beat until creamy.
COOL or can be done the night before.

IN LARGE MIXING BOWL----Add mashed potatoes, bread cubes, chopped onion, chopped celery, chopped parsley. Mix together (I wear plastic gloves and mix by hand).

Add salt and pepper, to taste. (OPTIONAL: Poultry seasoning can be added, if desired.) Mix in well.

Add eggs. Mix well.

Grease 9" x 13" pan. Add stuffing mix to pan. Spread out evenly. Poke 24 holes in it with your finger. Pour chicken broth into holes.

Cover with aluminum foil.

Bake in preheated 350-degree oven for 30 minutes. Uncover and bake for 15-30 more minutes (until lightly brown on edges).
