Put Yellow and Green Zucchini into pan with Tbs olive oil and sauteed with Red Pepper.

add in Spinach the last few minutes. You should cook until veggies are soft and opaque.

Put chicken broth into blender. I use Vitamix. Add in cooked veggies and blend. Blend on low for chunky and high for smooth. Add Salt/pepper to taste. Then add the coconut milk. You can use less if you want less of a coconut flavoring.
