1Chop all the vegetable and cook in 1 tsp olive oil. Meanwhile, beat egg whites and whole eggs together in a bowl. When veggies are softened add to egg mixture. Pour mixture into 8x8 pan sprayed lightly with cooking spray. Bake at 350 for 20-30 minutes.
