In a soup pot, cook sausage, pepper and onion over medium heat for 10 minutes, until sausage is browned. Drain any grease. Add broth, tomatoes, beans, spices and parsley. Bring to a boil. Quarter zucchini lengthwise, then cut into 1/4" slices. Add zucchini and washed spinach to pot. Return to boil. Reduce heat and simmer 15 minutes. Ladle into bowls and top with Parmesan cheese.
