Roast the red onions until very brown and carmelized. I toss in olive oil and roast at 350 probably 20-30 minutes, stirring often.

Measure out 1/4 c. of roasted onions.

Add all ingredients but vinegars and oil to blender and blend until the onions and shallots are well pureed.

Add in vinegars and blend again.

Slowly drizzle in oil and blend as you continue to drizzle in oil.
