mix cinnamon and coconut sugar in small bowl. scoop rounded tablespoons of dough and roll between hands to form a ball. roll dough balls in cinnamon sugar and put on cookie sheet. gently press down with bottom of a jar to flatten

bake for 8-10 minutes or until edges are golden. Cool on cookie sheet for 5 minutes. transfer to wire rack to completely cool. store in airtight container for 5 days.
