1preheat to 350, line cookie sheet with parchment
2combine first 5 ingredients, mix well.
3Add coconut oil, maple syrup, and vanilla mix until thick dough forms
4mix cinnamon and coconut sugar in small bowl. scoop rounded tablespoons of dough and roll between hands to form a ball. roll dough balls in cinnamon sugar and put on cookie sheet. gently press down with bottom of a jar to flatten
5bake for 8-10 minutes or until edges are golden. Cool on cookie sheet for 5 minutes. transfer to wire rack to completely cool. store in airtight container for 5 days.
