1in a large skillet cook sweet pepper, onion and serrano pepper in hot oil over medium high heat for 3-5 min then remove from heat
2lightly coat one side of each tortilla with cooking spray. On the uncoated side of two of the tortillas, divide half of the cheese. Top this with the onion mixture, tomatoes slices and the 1 tablespoon of cilantro and the remaning cheese. Then top the remaning sides of the tortilla
3Heat on a very large skillet or griddle set at medium. Cook the quesadillas for 4-5 min per side or until the cheese melt and the tortillas are slightly brown. Then cut into 4 wedges and serve
