Recipe Description Greek peasant salad. It's been the same for centuries because when something's this good, you don't mess with it. Crusty bread is recommended with this salad. DO NOT serve with lettuce: it doesn't need the empty filler.

1Peel and halve onion top to root. Slice each half in thin slices. Chop cucumber into 1/2 inch cubes (peeling is optional). Repeat with bell peppers and tomatoes. Toss vegetables in bowl with drained olives.
2Crumble feta over top. Sprinkle seasonings evenly over all ingredients. Drizzle vinegar and olive oil. Allow to sit five minutes before serving.
