in large bowl mix together vinegar, olive oil and herbs. Include ONLY a pinch of salt. Slice red peppers and onion and add to "dressing", let marinate for 30 minutes, tossing occasionally.

Wash and pat dry sole.

Place avocado oil in baking dish and coat fish, season with pepper to taste. Place in 350 pre-heated oven for 12-15, until fish is cooked to desired texture.
