| 1 | Preheat oven to 375F spray 9 x 12 glass casserole dish with non stick spray | 2 | wash mushrooms and cut into thick slices
Chop red pepper into 3/4 inch pieces | 3 | saute mushrooms 4-5 minutes in olive oil
Spread in bottom of glass dish
Sauté pepper until soft
Layer peppers over mushrooms
Crumble feta cheese over mixture | 4 | Beat eggs and egg whites and pour over mixture. Stir the mixture
Bake 35-45 minutes |
