1Preheat oven to 350 degrees F
2Place mini cupcake wrappers in pans
3In a large bowl, beat together eggs, oil, white sugar, and 1 tsp vanilla
4Mix in flour, baking soda, baking powder, salt, and cinnamon.
5Stir in carrots. Fold in pecans. Pour into mini cupcakes
6Bake in preheated oven for about 15 minutes, or until toothpick inserted into the center o the cupcake comes out clean.
7Let cool in pan for 10 minutes. Then turn out onto a wire rack and cool completely.
8Frosting--Combine butter, cream cheese, confectioners'' sugar and 1 tsp vanilla. Beat until smooth and creamy. Frost cupcakes.
