Preheat oven to 350 degrees F

Place mini cupcake wrappers in pans

In a large bowl, beat together eggs, oil, white sugar, and 1 tsp vanilla

Mix in flour, baking soda, baking powder, salt, and cinnamon.

Stir in carrots. Fold in pecans. Pour into mini cupcakes

Bake in preheated oven for about 15 minutes, or until toothpick inserted into the center o the cupcake comes out clean.

Let cool in pan for 10 minutes. Then turn out onto a wire rack and cool completely.

Frosting--Combine butter, cream cheese, confectioners'' sugar and 1 tsp vanilla. Beat until smooth and creamy. Frost cupcakes.
