Position rack in the center of the oven and preheat to 350 degrees; lightly grease pan (or spray with cooking spray); use an 8x8 inch cooking pan ( glass if you have one).

In a large bowl combine oats, walnuts, cinnamon, ground ginger and salt.

Mix in diced apples, applesauce, milk, eggs, maple syrup and vanilla

Stir in coconut oil until all ingredients are well combined.

Spread mixture into prepared pan and bake for 30 minutes or until set and light golden brown.

Allow to cool in baking dish for at least 5 minutes before serving.

Can be served warm and can add ice cream; or warm milk drizzled over!
