Pulse cashews in a food processor until coarsely ground. You want small bits and pieces to remain. Then add to mixer.

Next process the dates until a thick paste forms. It helps to add a small amount of cashews to the food processor to keep it from getting to sticky. Now add this to the mixer.

Add the dried goji berries whole or chop them up. Add the chia and cacao nibs.

Run the food processor until all the ingredients are well combined. Turn the resulting combination out on a dry non stick surface and knead until everything holds together.

Portion the mixture into 2 oz portion cups and compress to make everything stick together.
