In a large, deep skillet, over medium/high, heat 3 Tbsp olive oil and 1 Tbsp of butter. Add onion and saute for 1 minutes, or until soft.

Add garlic and saute another 30 seconds, stirring constantly.

Reduce heat to medium, add mushrooms, cover and saute 5 to 7 minutes, or until they get soft, stirring frequently.

Over medium/high heat, simmer the sauce until it is just barely beginning to thicken (about 5 min). It will not coat the noodles very well when it is hot, but let it cool just a little and it will get much thicker.

Add the chicken and season with more salt and pepper to taste

Add the cooked noodles and stir everything together.
