Mix together coconut flour, hemp protein and baking soda.

In a separate bowl, beat eggs and add pumpkin, xylitol and vinegar.

Melt palm shortening and pour into egg mixture while stirring to prevent cooking eggs.

Combine flour and egg mixtures.

Pour into loaf pans (I use glass) and bake at 350F for 60 min or until done.

Allow to cool briefly, then remove loaves from pans by inverting pan over your favorite cooling surface.
