butternut squash peeled, seeded, & cut into 1\" cubes (3 Lb squash)

medium (2-1/2\" dia)
Onion, chopped

wine, dry white

Vegetable stock

cream, half and half

teaspoon
red pepper, freshly ground course

Heat a heavy bottomed soup pot over medium low heat.

Add olive oil and onions and cook for 10 minutes or until onions are soft. Turn heat to high for 1 minute, add wine and reduce by half

Add stock and squash and bring to a boil.. Reduce heat to low and cook for 15 minutes until tender.

Add half and half, salt and pepper.

Remove from heat and add chives.

Blend soup until smooth. Taste and adjust seasoning.
