cups, cubesbutternut squash peeled, seeded, & cut into 1\" cubes (3 Lb squash)

medium (2-1/2\" dia)Onion, chopped

fluid ouncewine, dry white

cupVegetable stock

cupcream, half and half

teaspoonsalt

teaspoonred pepper, freshly ground course

teaspoon choppedChives

tablespoonolive oil
Steps
Sequence Step
1Heat a heavy bottomed soup pot over medium low heat.
2Add olive oil and onions and cook for 10 minutes or until onions are soft. Turn heat to high for 1 minute, add wine and reduce by half
3Add stock and squash and bring to a boil.. Reduce heat to low and cook for 15 minutes until tender.
4Add half and half, salt and pepper.
5Remove from heat and add chives.
6Blend soup until smooth. Taste and adjust seasoning.
