Preheat oven to 350 degrees. Mix pb, coconut sugar. Mix flax seeds with 9 tablespoons water and let sit for 3-5 minutes. Add flax seeds to pb and coconut sugar and mix until smooth. Add remaining ingredients minus the chocolate chips. Mix until all ingredients are combined. Lastly, mix in chocolate chips until distributed evenly. Scoop into rounded tablespoons and place on a cookie sheet lined with parchment paper. Bake for 7-10 minutes and let cool on a wire rack for 10 minutes.
