Steps
Sequence Step
1Mix wheat gluten, chickpea flour, nutritional yeast, and spices in a large bowl.
2In a separate bowl, mix ketchup, Worcestershire sauce, soy sauce, and water.
3Combine wet and dry ingredients, and kneed (with your hands) for 2 minutes.
4Wrap dough in cheesecloth (plastic wrap or a clean kitchen towel could work, as well), and drop into a pot of boiling vegetable broth.
5Boil for 60 minutes, turning the seitan loaf occasionally.
6Remove from broth, unwrap, and store in the fridge. When serving, cut into slices or desired shape.
