| 1 | Saute spinach in 1 tbsp. of olive oil. Combine with beans, corn, cottage cheese, spices and 2 cups of cheese. Fill tortillas with mixture. Pour half of sauce into the bottom of a 9x13 baking dish. Put tortillas in seam side down. Cover with remaining sauce and cheese. Bake for 20 min. at 350 degrees. |
