Mill down instant oats to oat flour. Next, in 2 separate bowls, add all dry ingredients together (mix well in first bowl. 2nd bowl, mash bananas well first, until all the lumps are gone. Add in all wet ingredients with mashed banana and mix well.

Combine all ingredients until completely mixed. It should be a battery consistency. Spoon in 2/3 batter in each muffin tin.

Fold nuts into batter, or you can just sprinkle on top after batter is in pan.
