1In a large pot, place the cubed ham and the chicken and beef stocks, and bring to a simmer.
2In a large frying pan, heat the EVOO and quickly sautee the carrot, onion and celery.
3Add the vegetables to the stockpot, and simmer for 90 minutes.
4Just before serving, add the spinach.
