In skillet, heat olive oil, add onions and sauté until slightly browned; add bell pepper and chiles; sauté then move to heavy pot.

Sauté chopped cilantro, parsley, green onions, and garlic and add to pot.

Brown meats, drain and add to pot.

Stir in seasonings. Bring to a boil, then simmer 60 to 90 minutes.

Serve with grated cheddar cheese, sour cream, crackers, and your favorite beer. Leave the windows open!
